I wonder how much do cats communicate through ears body language. It suddenly gets scared when the owner puts on the cat ears, so maybe it's seeing it as the owner being in attack mode or something like that.

Besides the problem that I don't think it thought the human was going to steal it's ears too, you can see that the cat's entire body language is "I'm scared, and trying to protect myself". Making it's body smaller and lower to the ground to protect it's soft belly, tucking it's tail in, and folding back the ears are classic signs of cats being scared and submissive in general.
It's also interesting as it suggests it views the human as being it's superior. It doesn't try to go in an attack stance itself, it KNOWS it has no chance against the human.
Or maybe it feared for the safety of its own ears.
