@Stellar its like I understand some people have medical conditions that make losing weight really hard but people who don't have those issues wanting to work toward a healthy weight has nothing to do with them

They don't like being fat. Nobody does. They're just not strong willed enough to do something about it, and they can't handle the lowest level of criticism or disapproval of their condition, because they simply are that weak.
And if by some extreme circumstances, there really is someone that enjoys being fat and doesn't feel any kind of internal guild for how they left themselves go, I promise you they won't be involved with any "fat acceptance" movement nor will they give a crap about "fat shaming".

I suspect it is at least partially a sex thing, but that's not my business.
that said, she did say she disliked what she called "fatphobic language", but I'm not sure of her definition thereof.
