@Mitsu go up as high as you can, select the roof in the build menu, click the roof you want, click on a space on the grid and then adjust the roof accordingly.

i never make the roofs too complicated though, just stretch one piece over the entire building lol. i wish it had what sims 3 did, with the auto roof feature.
