I have tried loosing weight, and although I have lost a lot already, I have to weight myself several times per day, since I am able to drink 2l of water and then panic, since my weight went suddenly up a lot....

Nah... I have found that the only relyable way to gather weight data is to measure it several times a week, and to be looking for a week minimum and maximum values. This way, I can clearly see the direction I am going.
Since I doubt many people are loosing more then 2kg/week, I find the advice to measure once a week seriously strange.
I just find that weighing yourself more than once a week makes little sense unless you have a super fast metabolism, those small changes during the week do not amount to anything in the long run, one day you might be more bloated, the other you might have less water weight and so on and so forth. Since I have quite the slow metabolism, weighing myself once a week, on the same day and approximately at the same time, minimises the deviations many factors can have on the weight and give me a more reliable number at the end of the day. Also: I found out that my weight chance window is 2 weeks, meaning that I see real change in my weight after two weeks of eating properly and working out or the other way around.
But there is no right or wrong way of doing it, just the way that works for you.
