Use yellow potatoes instead of brown. They stay rock solid even after sloelw cooking, though they'll still be tender

So this can be done on the fly, I'll provide you a few good samples:
- 2 lbs of beef. Your super market has "Stew beef" somewhere in the meat section and probably on sale
- 1 lb of frozen mixed veggies from the Harris Teeter or Food Lion frozen food section. Make sure to get green beans, peas, carrots, potatoes and onions
- 1 L of beef broth
- 1 tbsp garlic
- 1 tsp salt
- 1 tsp black pepper
- 1 tbsp paprika
Slowcook overnight
