I boil it for an hour or two, let it cool down a bit, then peel the skin off. Then I pan-fry it in butter a bit. Very tender.

I like cow tongue, but I oddly feel like it just tastes like lower grade horse meat. Never had calf though. Have however also had sheep tongue, which is also good
