I encourage tipping of landlords but that's it, and only because we're on-call 24/7 for emergencies

Yes - when restaurants do that, often a waitress/etc. will straight up say "yeah I don't get that tip." Tipping shouldn't be seen as a "I'm dealing with this person once" thing - it's a "I'm dealing with this person often" thing, and a waitress who sees a regular tip will often give them a heads up about this.
I've eaten places where this happens, and this is how I found out each time.

food: restaurant must be sit down unless I am a regular and they get my to go order right consistently then I'll tip at the register
bar: fuck... I don't remember the last time I went to a bar for the sake of getting drunk / hanging out. I'd usually have no more than a 203 drinks and would tip at least 20 before leaving
