You say “his or her” if you really want to be egalitarian, but most commonly people have said “he” if they don’t know the sex of an individual person, unless it’s likely to be a woman then you say “she” (e.g. “A customer [at a store most commonly frequented by women] left her phone here”).

“Gender” as used to apply to human psychology was invented less than a century ago by malicious actors to build up to the kind of bullshit we have with trannies today. Unless you are talking about declining verbs in Romance languages or other such uses, you shouldn’t use the word “gender” at all, even to say “there are only two genders” because you are validating their faggot social theories. There are only two sexes.
