@paula @renai The dough has moisture, it has water in it, or it would be a dust. The water is boiling, boiling water creates steam, steam is a gas, it brings the nocci up to temp and the liquid inside also is at boiling, it is also making a little steam, and so this is where gas would come from 
i find that unlikely, it's a thick dough submerged, where would the gas even come from
