What he says is technically not wrong, cause for the more intellectual bunch, the fear of a nuclear war isn't even the death of millions. They understand that humanity can strive on and overcome such tragedy. The issue is the possibility that the planet could become contaminated with insane amounts of radiation, that would simply make everywhere inhospitable to human life. That's not something we've ever faced, and it's not something we know how or if we could overcome.

Except we don't know if we van rebuild.
After 3 generations with barely any food, and destroyed technology, we will be happy if we manage to re-domesticate some animals.

I think you're taking the worst case possible, and assuming hydrogen bombs will literally destroy everything. In reality you'll only have bombs drop on major cities, with smaller ones and rural areas remaining unscathed. You'll still have farms capable of producing food, you'll still have plenty of domesticated animals.

The problem arises if you had fissile nukes drop instead, cause the radiation would spread even over the areas not attacked directly, and this would be the case where even farms would be compromised and you no longer have a good food source.

I wish I had the same faith in humanity as you do, but once the infrastructure fails, electricity and oil is out, I cannot say, how much farm land will be overrun by hungry survivors.

A new order must rise, before farming and rebuilding can start.
