Where are those numbers from?
It's way too high, so I checked Israel's ministry of medicine, it's 25% to 40% of Israelis have ANY allergy (similar to the US ~30%), with seasonal/pollen allergy being even less, and olive pollen specifically is a subset of that... so I'm not sure about this one.
In addition, allergies often develop as a result of exposure to the allergen, not avoidance of it, so if this proves anything, it's that Israelis spend a lot of time near olive trees.
