The baker refused a commission, and has the right to do so, since you can't force an artist's hand.
Twitter isn't taking artistic freedom with people's posts, they get a legal classification of a "platform" and are supposed to moderate without bias, in return for not being held liable.
One is defending their rights, the other is breaking the law (while getting government funding, and has government services on it).
It's apples to oranges.
