Well the thing about stereotypes is that they are to a certain point true, but like you say it's very hypocritical from the anti stereotype people to soyface at the stereotypes.
They interestingly don't always do that, when they race swap or insert minorities where they don't belong, they have them act like they've part of that society for centuries.
It ultimately just comes down to bad writing.

1) because console peasants expected to their underpowered box would be the target hardware for an high fidelity open world rpg
2) retards who never played the game and just fell for the internet rage
3) people who played it but just rushed through the main story
4) there are legitimate issues with the game and they matter to some people more or less
